👨‍🍳 Step-by-Step Instructions

1. Preheat the oven (optional)

Preheat to 350°F (180°C) if you plan to finish the frittata in the oven for a lightly golden top.

2. Prepare the vegetables

  • Rinse and cut the asparagus into 1½-inch pieces.

  • Slice the red onion thinly.

3. Sauté in the skillet

Heat olive oil in the cast iron skillet over medium heat.
Add the onion and cook until soft and translucent.
Add asparagus and peas, sautéing for 4–5 minutes until just tender.
Remove from heat.

4. Whisk the eggs

In a bowl, whisk the eggs with milk, salt, and pepper.
Fold in half of the goat cheese.

5. Combine and cook

Pour the egg mixture over the vegetables in the skillet.
Cook over medium-low heat for 5–6 minutes, until the edges are set but the center is still slightly soft.

6. Optional oven finish

Sprinkle the remaining goat cheese on top and transfer the skillet to the oven.
Bake for 5–6 minutes, until fully set and lightly golden.

7. Serve

Let rest for 2 minutes.
